Colorado trip in February 2016

So, for the better part of 10 years I ventured west (California, Utah, Colorado, British Columbia) for a trip each year. Due to some changes in my personal life and knee surgery I haven't been on a snowboard vacation in the last three years and I've decided to head back to Colorado in February of 2016. I live in Wisconsin and cheap, non-stop, flights to Denver are plentiful and while I've been to Steamboat, Beaver Creek, and Breck (2x) there are still many places I'd like to ride. I'm not getting any younger - I turn 48 this year - so if I keep pushing trips off I may never get back to real riding.
I figured there's no better place to ask than here so I'm hoping some of you who live in Colorado (or have extensive knowledge) and are familiar with the resorts in Eagle and Summit can provide some feedback.
This trip will be a bit different since my wife-to-be doesn't ride or ski and will be coming along for relaxation and to hit the spa. She likes to sleep in and when combined with some spa sessions it will allow me to ride while she's taking it easy. It would be great to meet up with some peeps from the forum and share a chair but I guess that all depends on when/where we end up going. We'd then spend the afternoon sightseeing and exploring the resort/town that we're at before dinner/drinks at night.
I consider myself a fairly strong intermediate/advanced intermediate rider (been riding for 15 years) and love corduroy. I've ridden groomed black runs at most places I've been and am not scared of going steep or fast. Moguls and ungroomed crud on the other hand are not much fun for me. I bought a new C3 Gnu Billy Goat at the beginning of last season and look forward to stretching its legs on real runs.
I'm thinking of going sometime in February - either before or after Presidents Day. Any thoughts as to if it's less crowded the week before or week after? I was thinking of a Wednesday - Tuesday trip to have a few days when the slopes are less crowded but also to enjoy the town/resort over the weekend when more people are around and it's not a ghost town.
I really want to hit Telluride but flights into Montrose are easily twice as expensive as Denver - in many cases even more. I've toyed with the idea of driving from Denver to Telluride but it seems like a long haul and any weather will make it even longer. If I had more time and could spilt the drive to/from Telluride into two days it might work but I'd rather be on the slopes than driving that far.
With all that being said, I'm looking for the following things in a resort:
- Within a couple hours of Denver unless there are those of you who think that a road trip through the mountains to Telluride would be doable the same day we arrive in Denver - I'm guessing we can easily get in before 12:00noon.
- Good groomed intermediate/advanced intermediate/advanced terrain - not interested in park/jumps/features at all. I've always wanted to try side/back country and if I can find a resort that offers this I'd like to do it. I'm guessing that I'd need some basic avalanche training/equipment so I might not have the time/funds for this.
- Has good nightlife and spa facilities. I've been to Breck twice and love the town but would prefer to try someplace new.
- I'd like to be close to the slopes - ski-in / ski-out would be preferable. I don't want to spend $500 per night on lodging but I'm not going to cheap out either - probably max out around $300.
I just started looking and the usual suspects such as Vail and Aspen are interesting. I was also thinking about Winter Park and Copper but I've got a lot more research to do. Any others I should be considering?
Thanks in advance for any recommendations.
