snowboard binding settings - confused

I am a second season newbie. When I bought my Burton board, the shop set the bindings at 9 and 6. My boyfriend changed them to 12 and something this season and I could not turn going from heel to toe turns so it's back and I am happier. How does one know what setting is best for each individual person? I am a windsurfer so understand how important mast position is, fin size, board size and sail size but this is confusing to me. Thanks!
